135g/4¾oz plain flour1 tsp baking powder½ tsp salt2 tbsp caster sugar130ml/4½fl oz milk1 large egg, lightly beaten2 tbsp melted butter (allowed to cool slightly)
- Sift the flour, baking powder, salt and caster
sugar into a large bowl. In a separate bowl or jug, lightly whisk
together the milk and egg, then whisk in the melted butter.
Pour the milk mixture into the flour mixture and, using a fork, beat until you have a smooth batter. Any lumps will soon disappear with a little mixing. Let the batter stand for a few minutes.
Heat a non-stick frying pan over a medium heat and add a knob of butter. When it's melted, add a ladle of batter (or two if your frying pan is big enough to cook two pancakes at the same time). It will seem very thick but this is how it should be. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm (½in) thick.
Repeat until all the batter is used up.

Pancakes, Bread and Nasty Stings
Another full on day today, starting with no bread left for toast, so I made some American Pancakes
we had them with some left over cream and maple syrup
The recipe I use is really easy,
I also had a go at making a loaf of bread in the Rayburn, came out great and tasted great, something I will be doing time and again. Its lovely to get back to baking again.
Last night I was sitting on the grass chatting to neighbours and I got stung on the back of my knee by a masonry bee, it went up my trouser leg, Today it has been very swollen and painful, the redness has spread to the the top of my thigh and down my calf, I have never had such a bad reaction to a sting.
Got some more done on the greenhouse today, its been scrubbed down and the membrane has been laid, the whole frame has been pegged down, we have started putting in the glazing panels some of them are broken so we have to find some-where to get some from, considering it was an old abandoned greenhouse in the hedge its shaping up nicely.
Another day draws to a close and its now time to get some shut eye.
