Cream of Spinach Soup and Painted Nails
Another lovely sunny day, this morning I brought round and spread another ton of gravel in the back garden area, one more to go, perhaps tomorrow I will get it done, its heavy work and as the tortoise has been located to that area I can only bring the wheelbarrow round when he is basking, as I have to take part of the temporary tortoise fence to get the barrow in, if he is stomping around he will get out and probably never be found again, I have until about 11am to get work done before he is full alert and about.
once it was done it was time for some lunch, I had a bag of spinach in the fridge that needed using up, so it was soup for lunch.
A very easy soup to do
Spinach about 400g roughly chopped
1 potato peeled and diced
1 onion diced
350ml of chicken or vegetable stock
2 garlic cloves chopped
zest of 1 lemon
melt the butter and add the onion and garlic to soften, then add the potatoes cook together stirring for about 5 mins then add the stock simmer for about 5 mins, then add the milk and lemon zest simmer for a further 10 mins, then add half the chopped spinach once wilted remove from heat add the remaining spinach and blend, season to taste and add some fresh cream to serve (optional)
adding the rest of the spinach just before blending gives it a fresh green colour.
This afternoon was just housework, feeding animals and a chance to relax a bit, I was drawing some designs for the back garden, I will show them tomorrow.
This evening after getting cleaned up I decided to paint my nails, something I haven't done for some time
not the best nail painting ever, they are my own nails and I don't wear gloves when working outside, how they survive I will never know, when I worked in the shop my nails never survived.
